Baked Sweet Potato Fries

Sweet potato is one of my favourite and most eaten foods.  One of my favourite foods ever is sweet potato fries but I have never attempted to make my own.  The word fries alone makes it sound unhealthy.  The other day I was really craving some sweet potato fries so I decided to make my own.

Raspberry and White Chocolate Brownies

It was a Friday night, I was home alone (I do live alone after all) and I got a craving for white chocolate brownies.  So I decided to make some.  That's what every twenty five year old dreams of.  Spending a Friday night at home alone baking.  Actually it was perfect.

I had never made white chocolate and raspberry brownies before so sort of made up the recipe as I went along.  They sort of turned into cakes.  Well, cake brownies.  But they were perfect.

White Chocolate, Baileys & Raspberry Cheesecake

On Christmas Day, my family never have the traditional Christmas pudding.  My Mum always makes a lovely, scrumptious pudding for us and it is different every year.  This year, I said it is my go.  I said that I would make a cheesecake.  Having never made a cheesecake before, I got searching for recipes.  I decided that I wanted to make a Baileys, white chocolate and raspberry cheesecake.

I must have looked at about 7 different recipes to get ideas, then incorporated them into my own.

Banana + Cinnamon Cakes

What are Sundays for if they aren't for baking? Seeing as one of my latest food obsessions is banana, I fancied making a cake with banana in it, so I got to work researching different recipes, and finally came up with something that I liked.  I liked this recipe the best.  We have the banana cinnamon cupcake.




100 grams wholemeal self raising flour
1 teaspoon cinnamon
1 egg
2 tablespoons honey
1 tablespoon melted butter
2 bananas
1 heaped tablespoon chocolate chips





With a spoon, combine the flour, cinnamon and chocolate chips.

Mash the bananas until all lumps are gone (this could also be done in a food processor).  Then add the egg, honey, butter and flour mixture.  Whisk until well combined.

Spoon the batter into muffin cases and place into a preheated oven at 180°C for 20 minutes.

Yummy!!



These cupcakes were so easy and quick to make, and I already had the ingredients.  I felt like they were not like normal cake consistency, but somewhere between cake and bread.  I will definitely be making these again!
